white chocolate chip matcha cookies

ingredients:

1/2 cup unsalted butter

1/2 cup sweetener*

1 tsp vanilla extract

1 egg

1 1/2 cups fine almond flour

1/2 tsp baking powder

1/2 tsp xanthan gum

1/4 tsp salt

3/4 cups sugar-free white chocolate chips**

2 tsp matcha***



instructions

  1. cut butter into small slices. place into a pan (preferably light colored) and set over medium heat. stir continuously for 5-10 minutes until butter becomes a golden color with toasted milk solids. take off heat and cool to room temperature

  2. preheat oven to 360°F

  3. combine the brown butter, sweetener, vanilla extract, and egg

  4. in a separate bowl, whisk together almond flour, baking powder, xanthan gum, salt, and matcha, making sure to break up any chunks from the almond flour

  5. combine dry and wet ingredients, then stir in white chocolate chips

  6. scoop out cookies (about 2tbsp each) and place onto a baking tray lined with parchment paper, gently flatten into a cookie shape

  7. cover tray with foil and bake for 8 minutes

  8. uncover the tray and continue baking for 2-5 minutes

  9. remove from oven and cool on the pan

  10. let cool completely before serving


notes:

*i prefer using baking blend stevia or erythritol and monkfruit

**lilly's chocolate makes good sugar-free white chocolate chips

***use 3tsp for a stronger matcha flavor
